This was a HUGE hit in my family. I made 3 huge pans full in the last week & making a fourth tonight. I cook it in a extra large frying pan & never used a lid. Didn't add much salt since bacon already has a lot of sodium.
Drained the bacon grease and while bacon was being blotted on paper towels I cooked the onions and garlic. Found that I didn't need to cook the cabbage nearly as long as the directions called for. Threw in a pinch of sugar. This is a fantastic dish! Husband loved it, had 2nds. And we have leftovers for the weekend. Will be making this regularly, and certainly on future St. Pat's Days!
I would DEFINITELY make this again, and wish I had made more to begin with, instead of cutting reipe in 1/4 (I was only msking for myself). I almost always change ingredients, but I wouldn't change any in this recipe (except to cut the salt WAY down). The blend of flavors was perfect! But after making this as directed, I WOULD change the cooking instructions a bit, which is why only 4 stars (would have given 4.5 but it didn't let me.) First I would remove the bacon and drain some of the bacon grease before caramelizing onion. And I would not add minced garlic until the onion was almost done ( garlic is quick to overcook and doesn't taste very good when it does). Then I would add the bacon back in and continue to follow the rest of the directions. Definitely will share this with friends and family!
